Pecan-Crusted Catfish with Honey Glaze

You'll Need:

8 (7- to 8-ounce) catfish fillets
3 cups pecans
Salt and pepper to taste

1 cup flour
1 teaspoon paprika

1/2 cup water
2 eggs
Peanut oil for frying

1/2 cup honey
1/4 cup (1/2 stick) butter

1/2 cup chopped fresh parsley

Procedures : Remove the fatty skin and bones from the fillets. Place the pecans in a food processor and pulse until the consistency of coarse meal. Season with salt and pepper and spread in a shallow dish. Mix the flour and paprika in a shallow dish. Whisk the water and eggs in a shallow bowl until blended.
Coat the fillets with the flour mixture and shake off the excess. Dip in the egg mixture and shake off the excess. Coat with the ground pecans and press lightly to adhere. Pour enough peanut oil into a large skillet to measure 1/4 inch. Pan-fry the fillets in the hot oil for 2 to 3 minutes per side or until the fillets flake easily and are light brown. Drain on paper towels.
Combine the honey and butter in a microwave-safe bowl. Microwave for 1 minute and stir. Drizzle the glaze over the fillets and sprinkle with the parsley.

SERVES: 8

Crab-Stuffed Shrimp

You'll Need:

4 ounces fresh mushrooms, finely chopped
2 Tablespoons butter
1 pound crab meat, flaked

1/2 cup dry sherry
1 hard-cooked egg, chopped

3 scallions, finely chopped
2 Tablespoons minced fresh parsley

1/2 teaspoon oregano
Salt and pepper to taste
1 cup fresh bread crumbs
1-1/2 cups (about) whipping cream

20 large shrimp, peeled, deveined, butterflied
6 Tablespoons melted butter
1/2 cup freshly grated Parmesan cheese


Procedures : Saute the mushrooms in 2 Tablespoons butter in a skillet until the liquid evaporates. Stir in the crab meat. Add the sherry, egg, scallions, parsley, oregano, salt, pepper and bread crumbs.
Steam, covered, for 2 minutes. Remove from heat. Stir in just enough whipping cream to bind the mixture.

Stuff each shrimp with a portion of the crab meat mixture. Arrange the shrimp stuffed side up in a baking dish. Drizzle with 6 Tablespoons butter, sprinkle with the cheese.

Bake at 350 degrees for 15 minutes.

Marinated Crawfish

You'll Need:

1-1/4 cups olive oil
3/4 cup cider or wine vinegar

2-1/2 Tablespoons capers
1 to 2 Tablespoons chopped fresh parsley
2-1/2 teaspoons celery seeds
1-1/2 teaspoons salt
1/2 teaspoon pepper
Tabasco sauce to taste

3 pounds Louisiana crawfish tails
3 or 4 green onions, chopped
1 small red onion, thinly sliced
Thinly sliced lemons


Procedures : Whisk the olive oil, vinegar, undrained capers, parsley, celery seeds, salt, pepper and Tabasco sauce in a large bowl. Add the crawfish tails, green onions, red onion slices and sliced lemons and mix well. Marinate, covered, in the refrigerator for 1 to 10 hours, stirring occasionally.
Serve as an appetizer with wooden picks, or spoon the crawfish mixture over a bed of shredded lettuce and serve as a salad. Great recipe for leftover crawfish.

SERVES: 6 - 8

Fish In A Vegetable Patch

You'll Need:

1 cup tomato sauce
1 cup diced celery
1/2 cup chopped green bell pepper
1/2 cup diced onion
1/3 cup diced carrots
2 tablespoons lemon juice
1 1/2 teaspoons Worcestershire sauce
1/2 tablespoon salt
1 pound halibut fillets
4 slices lemon, for garnish

Procedures : In a small sauce pan, combine the tomato sauce, celery, green pepper, onion, carrots, lemon juice, Worcestershire sauce and salt. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes.
Spoon vegetable mixture into a shallow 1 1/2 quart baking dish. Place fish filets over vegetables and spoon some of the sauce over the fish.
Bake, uncovered, at 400 degrees F (205 degrees C) for about 15 minutes or until fish flakes with a fork. Garnish with lemon twists and chopped celery

Fish in Foil

You'll Need:

2 rainbow trout fillets
1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Procedures : Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork

Fish in a Red Sauce

You'll Need:

1/4 cup olive oil
1/4 cup fresh parsley, minced
8 ounces pimento, chopped
salt and pepper
1 (28 ounce) can tomato puree
3 tomatoes, chopped
2 carrot, sliced
2 strips celery, sliced
2 cloves garlic, minced
water
3 tablespoons fresh lemon juice
6 (3 ounce) fillets cod
1 teaspoon white sugar

Procedures : In a large saucepan, combine the parsley, pimento, salt, pepper, tomato sauce, and fresh tomatoes. Bring to a boil. Add carrots, celery and garlic. Cook until carrots are cooked, but still firm.
Stir in a little water and juice of 1 lemon. Place fish into pan without stirring. Baste fish with liquid. Add sugar.
When the fish is cooked, remove from heat. Let cool and serve cold

Fish Fillet Florentine

You'll Need:

1 (12 ounce) package Gorton's? Crispy Battered Fish Fillets
1 medium onion, chopped
3 tablespoons margarine or butter
3 tablespoons all-purpose flour
1 3/4 cups milk
1 teaspoon salt
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon Worcestershire sauce
1 (10 ounce) package frozen chopped spinach, thawed and drained

Procedures : Heat oven to 425 degrees F. Cook and stir onion in margarine in 2-quart saucepan until tender. Stir in flour. Cook over low heat, stirring constantly, until bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in remaining ingredients except Fillets.
Place Fillets, with sides touching, in ungreased rectangular baking dish, 11x7 inch; pour sauce over Fillets. Bake uncovered until hot, 25 to 30 minutes

Fish Chowder

You'll Need:

2 tablespoons butter
2 cups chopped onion
4 fresh mushrooms, sliced
1 stalk celery, chopped
4 cups chicken stock
4 cups diced potatoes
2 pounds cod, diced into 1/2 inch cubes
salt to taste
ground black pepper to taste
1/8 teaspoon Old Bay Seasoning TM, or to taste
1 cup clam juice
1/2 cup all-purpose flour
2 (12 fluid ounce) cans evaporated milk

Procedures : In a large stockpot, melt 2 tablespoons butter over medium heat. Saute onions, mushrooms and celery in butter until tender.
Add chicken stock and potatoes; simmer for 10 minutes.
Add fish, and simmer another 10 minutes.
Season to taste with Old Bay seasoning, salt and pepper. Mix together clam juice and flour until smooth; stir into soup. Remove from heat, and stir in evaporated milk. Serve

Fish Benedict

You'll Need:

1 (18.1 ounce) package Gorton's? Original Battered Tenders
1 (6 ounce) package Canadian bacon
1 packet Hollandaise sauce mix
1 (12 ounce) package English muffins

Procedures : Bake Tenders according to the directions on the package.
Prepare Hollandaise sauce as directed. Cook bacon as directed. Toast English muffins.
Place 1 piece of bacon and 2 tenders on English muffin and spoon Hollandaise on top. Serve immediately

Fish and Chips

You'll Need:

1 quart vegetable oil for frying
1 pound red snapper fillets
1 egg, beaten
1/2 cup dry bread crumbs

Procedures : In a large heavy skillet, heat oil to 375 degrees F (190 degrees C).
Dip fillets into beaten egg and dredge in bread crumbs.
Gently slide fish into hot oil and fry until golden brown. Drain briefly on paper towels. Serve hot

Fennel, Potatoes and Grilled Fillets

You'll Need:

1 (7.6 ounce) package Gorton's? Grilled Fillets (any flavor)
4 large red potatoes
1 medium fennel bulb
1 clove garlic, minced
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium tomato, seeded and diced

Procedures : Preheat oven to 425 degrees.
Cut potatoes and fennel crosswise into thin slices. Transfer to a 2 quart shallow baking dish and toss with garlic, olive oil, salt and pepper. Bake for 30 minutes, stirring once.
Place Grilled fillets on top of vegetables and bake an additional 20 minutes. Sprinkle with diced tomato and serve garnished with fennel tops

Firehouse Clam Bake New England Style

You'll Need:

20 small (1 pound) lobsters
20 pounds clams in shell, scrubbed
10 pounds mussels, cleaned and debearded
10 pounds cod
20 white potatoes
20 sweet potatoes
20 ears fresh corn
5 pounds bratwurst
5 pounds hot dogs
5 pounds pork sausage
3 pounds sweet onions

Procedures : At the beach dig a hole in the sand with the approximate proportions: width = 2 feet, length = 4 feet, depth = 1-1/2 feet. Line the hole with stones from the beach. Build a fire inside of the hole and cover with rocks from the beach. Heat the stones for 2 to 3 hours.
Remove coals and/or embers from the hole. Arrange hot stones evenly across the bottom of the hole. Place fresh 1/2 bushel seaweed (wet) on top of the hot stones.
Working quickly layer the food on top of the seaweed, the food should be layered evenly on top of each other in the following order: clams, mussels, fish, sausage, hotdogs (wrapped in cheesecloth), onions, potatoes (white and sweet), corn, and finally lobsters.
Cover food with a clean, wet cloth. Place remaining seaweed on top of cloth.
Cover entire hole of food with a wet tarpaulin, sealing the steam created by the hot stones and seaweed in. Allow a very small amount of steam to escape to relieve pressure. Let bake cook for 1 or more hours. The bake is completed when the potatoes are soft. Serve bake with melted butter to dip the seafood in and lobster crackers. Don't forget napkins -- you'll need 'em!

Fennel Crusted Grouper

You'll Need:

2 teaspoons McCormick? Gourmet Collection? Fennel Seed
1 teaspoon McCormick? Gourmet Collection? Dill Weed
1 teaspoon McCormick? Gourmet Collection? Thyme Leaves
1/2 teaspoon salt
1/4 teaspoon McCormick? Gourmet Collection? Coarse Grind Black Pepper
2 pounds grouper fillets
2 tablespoons olive oil, divided
2 tablespoons dry white wine

Procedures : Toast fennel seeds over medium heat 1-2 minutes or until aromatic in a small skillet. Remove from skillet. Finely crush toasted seeds using a mortar and pestle, a spice mill, a clean coffee grinder or a rolling pin. Blend with dill, thyme, salt and pepper.
Rub spice mixture evenly on both sides of grouper fillets. Drizzle with 1 tablespoon oil; set aside.
Heat remaining oil over medium-high heat in a large nonstick skillet. Add fillets; saute 4-5 minutes per side or until done and lightly browned. Add white wine to pan; cook 1 minute. Remove grouper to serving plate. Serve with Vanilla Beurre Blanc, if desired

Fiesta Conch

You'll Need:

8 fresh conch, shells removed
1/2 lemon, juiced
2 tablespoons olive oil
2 cloves garlic, minced
1 medium onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
3/4 cup diced celery
1 1/2 cups chopped mushrooms
1 (28 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/3 cup ketchup
1/4 teaspoon white sugar
1 teaspoon red pepper flakes, or to taste
salt and pepper to taste

Procedures : Pound the conch meat with a mallet until tender. Chop into bite-size pieces. Place in a bowl, sprinkle with lemon juice, and set aside.
Heat the oil in a skillet over medium heat, and cook the garlic, onion, green bell pepper, red bell pepper, celery, and mushrooms until tender. Mix in the tomatoes, Worcestershire sauce, ketchup, and sugar. Season with red pepper, salt, and pepper. Bring to a boil. Reduce heat to low, and simmer uncovered 20 minutes, stirring occasionally.
Mix the conch meat into the skillet, and continue to cook 10 minutes. Do not overcook, or the conch will become tough

Fantastic Lemon Butter Fillet

You'll Need:

1/2 cup butter
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Procedures : Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve

Fantastic Crab Dip

You'll Need:

1 (8 ounce) package cream cheese, softened
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
2 green onions, chopped
6 ounces imitation crabmeat, diced
1 pinch salt
1 pinch ground black pepper

Procedures : In a medium bowl, mix cream cheese until soft and smooth. Blend in lemon juice, Worcestershire sauce, and salt and pepper. Mix in garlic, onions, and crab meat. Store, covered, in refrigerator until ready to use.
To serve warm, heat in microwave for 3 to 4 minutes

Caribbean Crab Souffle

You'll Need:

1/2 cup sweetened, flaked coconut
4 tablespoons unsalted butter
1/3 cup celery tops
1 clove garlic, minced
1/2 teaspoon curry powder
1/2 teaspoon dried thyme
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
ground black pepper to taste
3 tablespoons unbleached all-purpose flour
1 1/4 cups milk
4 egg yolks
1/2 pound crabmeat
6 egg whites, stiffly beaten
1/4 teaspoon fresh lemon juice

Procedures : Preheat oven to 400 degrees F (200 degrees C). Butter a 8 cup souffle dish.
Toast coconut in a non-stick skillet over low heat.
In a medium skillet, melt butter over low heat and add the celery, garlic, curry powder, thyme, red pepper flakes, salt and pepper - cook for 3 minutes. Stir in flour until smooth for about 1 minute. Pour in milk and cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Set aside and cool slightly. Whisk the egg yolks one at a time into the sauce. Stir in coconut and crab meat.
In medium bowl, beat egg whites and lemon juice with a mixer until stiff, but not dry. Stir 1/4 of the whites into crab mixture. Quickly and gently fold in the remaining whites. Do not deflate the volume. Transfer mixture to the souffle dish and place it on a rack at the bottom of the oven.
Bake for 30 minutes or until golden, puffed and still moist inside

Caribbean Pasta with Shrimp

You'll Need:

4 cloves garlic, minced
1/4 cup minced shallots
1 tablespoon minced fresh ginger root
3 tablespoons olive oil
1 green bell pepper, seeded and chopped
1 1/2 cups tomato - peeled, seeded and chopped
2 teaspoons curry powder
1/2 teaspoon whole allspice berries
1/2 cup chicken stock
1/4 cup brandy-based orange liqueur (Grand Marnier?)
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons cornstarch
2 tablespoons chile paste


8 ounces rotini pasta
1 1/2 pounds medium shrimp - peeled and deveined
1/2 cup fresh cilantro, chopped

Procedures : In a small bowl, combine garlic, shallots, ginger and oil. In another small bowl, combine green pepper, tomato, curry powder, allspice, chicken stock, Grand Marnier, soy sauce, brown sugar, cornstarch, and chile paste. Cover and refrigerate both until ready to use.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Heat a large saute pan over high. When hot, add garlic-oil mixture. Saute until garlic begins to sizzle but has not browned. Stir the tomato mixture, then pour into the saute pan. Bring to a rapid boil and cook until it begins to thicken, about 3 minutes.
Stir in the shrimp, and toss until they become pink, about 2 minutes. Immediately add the pasta. Stir and toss until well combined and pasta is heated through. Taste and adjust seasonings, especially salt.
Transfer to a heated platter and sprinkle on the cilantro. Serve at once

Caribbean-Marinated Shrimp and Scallops

You'll Need:

1 tablespoon vegetable oil
1 pound sea scallops
1 pound large shrimp, peeled and deveined
1 cup diced bell pepper (red or yellow, or combination of both)
3/4 cup minced red onion
3 tablespoons thinly sliced green onions


Marinade:
1/3 cup orange juice
2 tablespoons lime juice
1 tablespoon extra virgin olive oil
1 tablespoon McCormick? Caribbean Jerk Seasoning
1 teaspoon McCormick? Basil Leaves

Procedures : Heat vegetable oil in a large skillet over high heat; add scallops to hot pan and sear 1 1/2 to 2 minutes per side. Transfer scallops to medium bowl and chill. Saute shrimp in same pan 4 minutes or until shrimp turn pink. Transfer shrimp to another bowl and chill.
Combine marinade ingredients in a large bowl. Add chilled shrimp, bell pepper, red onion, and green onions. Cut chilled scallops into quarters; add to bowl; toss well. Cover and refrigerate for at least 1 hour

Capers and Halibut

You'll Need:

1 tablespoon olive oil
2 (8 ounce) steaks halibut
1/2 cup white wine
1 teaspoon chopped garlic
1/4 cup butter
salt and pepper to taste
3 tablespoons capers, with liquid

Procedures : Heat the olive oil in a large skillet over medium-high heat. Fry the halibut steaks on all sides until nicely browned. Remove from pan, and set aside.
Pour the wine into the pan, and use a spatula to scrape any browned bits from the bottom. Let the wine reduce to almost nothing, then stir in the garlic, butter and capers. Season with salt and pepper to taste. Let the sauce simmer for a minute to blend the flavors.
Return the steaks to the pan, and coat them with sauce. Cook until fish flakes easily with a fork. Serve fish immediately with the sauce from the pan poured over it
